#EmeraldLifeThursdays | Soft Baked Pumpkin Cookies

Hi there,

When it comes to the blog I seem to be lacking. Maybe lacking is an understatement.

Anywho's here is the recipe for the Soft Baked Pumpkin Cookies.

1 1/2 cups Granulated Sugar
1/2 cup of butter, softened
1 egg
1 tsp vanilla
1 cup Libby's pumpkin
2 1/2 cup of All Purpose Flour
1 tsp baking powder
1 tsp baking soda
1 tsp of cinnamon
1/2 tsp of nutmeg
1/2 tsp salt
1/2 tsp pumpkin spice

Preheat oven to 350* With a stand alone mixer or with a hand hold cream together 1 1/2 cups of sugar & 1/2 cup of butter for 2 minutes. Add in your egg, pumpkin puree, and vanilla until combined.
In a separate bowl add together all your dry ingredients. Flour, baking powder, baking soda, ground cinnamon, ground nutmeg, salt, and pumpkin spice. Add dry ingredients to wet ingredients slowly until fully incorporated.

On a greased sheet pan scoop out cookies & press down with forks. Put sheet trays with cookies in freezer for about 10 minutes. After 10 minutes take out & put in oven for 15-20 minutes. 15 minutes if you're like me and like them super ooey gooey.

Once cookies cool drizzle with vanilla frosting. (Recipe down below)

Vanilla Frosting Recipe

2 cups sifted powdered sugar
3 tbsp milk
1 tbsp melted butter
1 tsp vanilla extract

Doesn't need to be heated, but can be.

Makes about 24 cookies.
